Basic Dominican Mangu Recipe

Ingredients

  • 4 unripe plantains (Green ones)

  • 4 tablespoons of butter

  • 3 tablespoons of olive oil

  • 1 large red onions

  • 1 tablespoon of vinegar

  • Salt

  1. Peel the plantains and cut them in half. Put the plantain in a pot with water and boil adding 2 teaspoons of salt to the mix. When the plantains are tender about 25 minutes turn off the heat.

  2. While the plantains are boiling, heat 2 tablespoons of olive oil in a pan. Sautee the onions, add the salt and the vinegar and save it.

  3. Take the plantains out of the water once tender and proceed to mash them with a fork. Add the butter and 1 tablespoon of olive oil and keep mashing until the consistency is very smooth. Top it off with the onions.
